Zucchini Boats

Stuffed Zucchini Boats is one of my favorite recipes.  I am sorry to have to say, I had to purchase these zucchini’s because, as I’m sure your tired of hearing me lament, I have no produce of my own at this time.  🙁  This recipe is fast, easy, and tasty, making it a real winner for me.

    This looks easy enough and sounds delish. Thanks for sharing it.

    No need to feel badly about not having zucchini right now… you’d have to live somewhere very far north to be successful at growing zucchini this time of year. But I’m planting some next week for a fall harvest. Great thing about Florida… two seasons for planting!

    Ahh I remember my mom making these a few times when I was little – I bet my kiddos would love them, too. Thanks for the reminder. I’ll have to buy my zucchini too, since the squash bugs have done the plants in. :::sniff:::

    Looks great! I may try zucchini next year. I’m not sure I’m totally crazy about it, but I love how you can turn it into anything -even your adorable little boats! We do something similar with Bitter squash and pork. Then we put a black bean garlic sauce over the top. I’ll have to ask my mom to make it sometime and get the recipe.

  6. We just pulled up the last of our zucchini plants, but I am definitely saving this recipe for next year. Or maybe I will send some other grower into shock by begging for a big one.
